Herbed Tahini and Miso Sauce

This all-purpose sauce can be made with whatever garden herbs you desire. In the early spring I use chervil but later in the summer I use marjoram. Loosely pack the herbs when measuring. Even the tender stems can be blended into this amazing sauce which can be used on chicken, fish, pork, and all types of vegetables.

Use whatever herbs are ready from your garden. Pictured here is cilantro, Italian parsley, chervil, marjoram, dill, and mint.

 1 cup (16 tablespoons)

Ingredients:

1 cup cilantro, leaves and tender stems

1 cup Italian parsley, leaves and tender stems

1 cup fresh chervil or marjoram, leaves and tender stems

1 cup fresh thyme, or dill or mint leaves and tender stems

¼ cup tahini

2 tablespoons white miso

1 teaspoons garlic, smashed, peeled

2 tablespoons fresh lemon juice

1 teaspoon kosher salt

5 tablespoons or more filtered water

Directions:

1.       Place all the herbs in a food processor. Puree until finely chopped. Add the tahini, miso, garlic, lemon juice, and salt process until smooth. Drizzle the water a tablespoon at a time until pouring consistency. Taste, Think, Transform with salt and/or lemon juice.

2.       Store leftover sauce in a screw-top jar in fridge for up to 5 days. Before using stir and add more filtered water as needed.
