Cranberry Fool

No, you don’t need to be a fool to enjoy this simple but elegant dessert! It is an English dessert made with sweetened fruit folded into whipped cream. INGREDIENTS:

2 cups cranberries

⅔ cup allulose

1 pinch kosher salt

1 cup heavy whipping cream

1 tablespoon Grand Marnier or orange blossom water

4 mint sprigs

DIRECTIONS:

Combine the cranberries, allulose, and salt in a small saucepan over medium heat until the cranberries burst and thicken, about ten minutes. Remove from heat. Allow it to cool.

Whip the heavy cream in a mixing bowl until soft peaks form. (Cream whips better if you freeze the stainless steel mixing bowl and whip in the freezer for a few minutes).

Mix the Grand Marnier into the cooled cranberry mixture. Gently fold this mixture into the whipped cream.

Spoon into the serving glasses and refrigerate for at least one hour before serving. Top with mint sprigs.
