Roast Delicata Squash with Honey Lemon Brown Butter Sauce
Squash season abounds in my garden. My new go-to squash is delicata, prized for its ease of preparation. The delicate skin is edible, so peeling this squash is unnecessary. This recipe comes together in about thirty minutes and is a great side dish for roast meat or poultry. The nutty sweetness of the sauce enhances the creaminess of the squash.

INGREDIENTS:
2 delicata squash (about 1 pound) seeded, cut into half, seeded, ¼ inch slices
2 tablespoons extra virgin olive oil
½ teaspoon kosher salt
1 teaspoon smoked paprika
¼ cup butter
½ tablespoon honey
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
2 tablespoons mint leaves, chopped
DIRECTIONS:
Preheat oven to 375°F. Toss the squash in the olive oil and place on a Silpat mat or parchment-lined sheet pan. Sprinkle with the salt and paprika on all sides—roast until tender, about twenty to twenty-five minutes.
Meanwhile, melt the butter in a sauté pan until it foams and browns for about five minutes. Then, carefully add the honey and lemon juice. When blended, remove from the heat.
Place the squash slices on a platter. Drizzle with the brown butter sauce and, scatter the lemon zest and mint about.
