Cuban Orange Pork on Mango Salad With Sour Orange Vinaigrette

Choose ripe, soft mangoes and avocados to pair against crunchy radishes and baby sweet peppers. Toss salad greens together with the tangy sour orange vinaigrette. Charming summer eating!

INGREDIENTS:
Vinaigrette:
4 tablespoons avocado oil
1 tablespoon orange muscat champagne vinegar (Trader Joe’s)
1 tablespoon lime juice
1 teaspoon honey
¼ teaspoon Kosher salt
Salad:
1 mango, peeled, seeded, diced
1 avocado, peeled, seeded, diced
3 radishes thinly sliced
3 baby sweet peppers, seeded, thinly sliced
4 cups assorted baby lettuce
2 cups shredded Cuban Orange Pork Shoulder, shredded*
DIRECTIONS:
Toss all vinaigrette ingredients together in a small jar.
Toss the baby lettuce with the vinaigrette. Place on four chilled plates or one large platter. Top with the mangos, avocados, radishes, and peppers. Briefly heat the shredded pork in the microwave. Place on top of the salad(s). Serve immediately.
