Cucumber Tomato Salad
In the summer, simple preparations always seem to be the best. My grandmother would bring a huge beefsteak tomato from the garden and only adorn slices with salt and pepper. What marvelous flavor those tomatoes had! That is the beauty of garden-fresh produce. Even if you buy your produce from a farmers’ market or food co-op, you can produce a simple salad like this that is full of superb flavor.

INGREDIENTS:
½ cup red onion, small diced
1 pint cherry tomatoes, halved (preferably sun gold tomatoes)
4 Persian cucumbers, small diced (or pickling cucumbers)
¼ cup fresh mint leaves, minced
¼ cup fresh dill, minced
¼ teaspoon ground coriander
½ teaspoon sea salt
¼ teaspoon fresh ground black pepper
2 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
DIRECTIONS:
Soak the red onions in room-temperature water while prepping the other ingredients to tame the starchy, sharp flavor.
Drain the red onions and toss with the remaining ingredients. Serve at room temperature or chilled.
Note:
It can also be served on top of salad greens.
