Kohlrabi Slaw

Kohlrabi is one of the least-known vegetables in the Brassica family. They are sometimes referred to as a turnip cabbage. Kohlrabi comes in purple and green varieties, which hardly matters as the insides are pale green or white. The outside must be thoroughly peeled and any fibrous parts removed. Use a mandoline to create the ⅛-inch kohlrabi, radish, and carrot matchsticks for best results.

INGREDIENTS:

2 tablespoons rice wine vinegar

1 tablespoon mirin

2 tablespoons avocado oil

1 teaspoon ginger, grated on a fine microplane

½ teaspoon sea salt

¼ teaspoon freshly ground black pepper

3 kohlrabi bulbs, peeled, cut into ⅛-inch matchsticks (about 2 cups)

2 large or 3 small radishes, cut into ⅛-inch matchsticks

1 small carrot, cut into ⅛-inch matchsticks

1 ½ tablespoons cilantro or Tahi basil, finely chopped

1 teaspoon black sesame seeds

DIRECTIONS:

  1. Whip the avocado oil into the vinegar, mirin, and ginger in a small bowl—season with salt and pepper.

  2. Place the kohlrabi, radish, carrot, and cilantro into a large mixing bowl. Pour in the dressing and toss to combine. Taste, Think, Transform with salt and pepper. Scatter the sesame seeds on top and serve at room temperature or cold.
